For the month of September, we present a dessert by chef and CercleV 2022 calendar winner Sébastien Lefebvre.
Having worked as a pastry chef since 1998, Sébastien opened Framboise et chocolat three years ago. The shop is in Sainghin-en-Weppes (Nord).
Sébastien makes it a point of honor to make his products completely from scratch using quality ingredients that have been bought locally whenever possible.
His pastry is modern, elegant and indulgent, but it also retains a traditional feel because it concentrates on classics such as flan, millefeuille or chocolate éclairs.
What he loves about Valrhona is its quality, its variety of tastes and the way products balance flavor and texture.
Sébastien presented the Cercle V calendar with a Manjari macaron. It has an intensely chocolatey flavor that marries perfectly with the tangy aftertaste of Manjari 64%. This technical feat had to be cooked to perfection.
