Her career

Hyelim studied at the Korean pastry school for four years, graduating in 2008. Following her passion for pastry and baking, she joined her first job at Kim Young-mo Bakery. There, she worked for four years as a chocolate sous-chef. She fell in love with chocolate while making bonbons and crafting chocolate for various events. After that, she moved to New Zealand in search of new experiences and worked at a cake shop for two years. Returning to Korea in 2016, she joined the technical team of BakePlus, a bakery ingredients company. She worked there for four years, testing products from various brands and developing recipes.

Hyelim joined L’École Valrhona in February 2020 and shares pastry skills and develops recipes for Valrhona customers in Korea.
