Valrhona Chocolate course at the Dolce la Hulpe in Brussels 2009-11-10 - FRANCE - Events An event with a festive theme Euro-Toques, the association of European chefs founded in 1986 by Pierre Romeyer and Paul Bocuse, is campaigning for good quality food.Thus it was that, on October 26th, some 25 students from Hotel and Catering schools sponsored by the association, were invited to attend a course at the Dolce la Hulpe hotel in Brussels. Here, in the main auditorium, they were able to watch demonstrations by London pastry-cook, Benoit Blin, who teaches at Valrhona’s Ecole du Grand Chocolat in Tain l’Hermitage.The programme included: Pear Melba, Genoese sweet bread with a light “Macae” mousse, a Bounty “ovalis”, a new version of the toffee apple, and a chocolate biscuit pastry for ETNAO inserts.At the end of the course, everyone was given a souvenir book of chocolate recipes, thus ensuring that no detail of this very special day would be forgotten.
