A high altitude demonstration in St Moritz

At the end of January Patiswiss, Valrhona chocolate’s general importer in Switzerland, organised a demonstration for its hotel and catering clients in the Grisons area.
The event took place at an altitude of 2486 metres, on the Corviglia plateau, at the premises of Mathis Food Affaires.Pastry chefs from the region attended the course, which was led by Christophe Lindpointner, pastry chef at the Ikarus gourmet restaurant in Salzburg’s Hangar 7. The chef demonstrated creative desserts plus an original iced dish, whose splendidly complementary flavours were based on Valrhona’s Tainori 64%, Jivara lactée 40%, Nyangbo 68% and Cœur de Guanaja 80%.Those attending the course watched with interest as Mr Lindpointner explained and demonstrated every step involved from production to assembling the desserts.Patiswiss is planning more courses for pastry chefs and confectioners in 2010.
